Cilantro Lime Shrimp Salad Recipe

This Cilantro Lime Shrimp Salad recipe is simple to make and is a delicious low calorie meal. It is a healthy choice that can be served when planning for that summer cookout. Cilantro lime shrimp salad is a perfect refreshing tasty choice that is sure to be a hit with your family and friends. 

Ingredients:

1 pound frozen cooked baby salad shrimp
2-3 cups of fresh spinach
I bunch of fresh Cilantro
4-6 leaves of romaine lettuce
1 can of sliced olives
¼ cup of fresh lime juice
¼ cup of olive oil

Fresh mushrooms if you want added taste. 

Directions:

Chop the cilantro into very fine pieces. Then chop the lettuce and fresh spinach into small – mid size pieces. Add all of the ingredients into a chilled bowl, and stir gently until all of the ingredients have a light coat of olive oil, lime juice and cilantro covering them. Let this mixture set for a few minutes before serving. This quick and easy recipe is a salad that you will be proud to serve, and one that your friends will rave about and demand the recipe for.

Tasty Cilantro Lime Shrimp and Avocado Salad Recipe

This is another great recipe but includes a few different ingredients. Just as tasty but with a little spice, and just as easy to make. With the addition of tomato, red onion, and avocado it takes on the appearance of something you would expect at a Cinco de Mayo party. Including cilantro lime shrimp and avocado salad in your summer meal planning is a delicious and healthy option. It may be served simply as a salad or as a dip, appetizer and even a meal. 

Ingredients:

1 to1 1/2 pounds of cooked deveined shrimp, chopped into small pieces
1 medium diced tomato
1 diced avocado
1-2 jalapeno peppers, diced finely  without seeds
¼ cup of diced red onion
Fresh squeezed lime juice, approx. 2 limes
2 tsp of olive oil
¼ cup of finely diced fresh Cilantro 

Directions:

Using a medium size bowl combine together the olive oil, lime juice, jalapenos, onions, a pinch of sea salt and coarse ground pepper. Let this marinate for 10- 15 minutes to enhance the flavors. Stir in the shrimp and tomatoes. Gently stir in the avocado and cilantro. Serves 4. The recipe is easy to double up or even triple up if you are serving a larger group of people.
