This creamy tomato soup recipe is a simple and healthy option for a delicious meal. It can be enjoyed year round but it is always a winter time favorite. A bowl of fresh homemade hot creamy tomato soup is always a treat. When you feel bad a bowl of this helps give you a boost of energy and starts you on the path to recovery. This simple recipe is easy to make, takes less than thirty minutes to prepare and will serve 4 people. You can double the ingredients and have enough left over to freeze and take for lunches.

Ingredients:

2 15 oz cans of chicken or vegetable broth
1 large can crushed tomatoes, for a little spice use spicy crushed tomatoes
1 cup of heavy whipping cream

Directions:

Mix together and stir over medium heat until well blended. Heat until desired temperature and serve.

Additions:

This can be served with regular crackers or you can be creative and make some of your own toppers.

Placing a few fresh basil leaves on the top of the soup is a nice way to add a little flavor and always looks nice. 

Make your own toasted croutons/crackers.

Take 4-5 slices of whole grain crusty bread such as five grain or multi grain bread. Cut into small cubes. Spread on a cookie sheet, drizzle a small amount of olive oil on them. Add chopped garlic if you like, sprinkle with black pepper, a little course ground sea salt, and top with your favorite cheese. Place them under your broiler to get brown and toasty. A few bacon bits sprinkled on the top is always an added plus for tomato soup.

Ingredients:

Large can of chopped or diced tomatoes OR 6 medium fresh tomatoes mashed well

1 cup of vegetable broth
½ cup of almond milk
2 teaspoons of minced garlic
1 chopped onion
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 teaspoon of apple cider vinegar
salt and pepper to taste

Directions:

Blend together in the order labeled above in a medium sauce pan while stirring over medium heat. Continue stirring until it comes to a boil. Boil approximately 5-10 minutes, until tomatoes are cooked well. Remove from heat, cool and serve.

This is an excellent recipe, quick and easy to make. If you like your food a little spicy you can use the spicy tomatoes or add some jalapeño peppers to it. It can be adjusted to suit your taste. Add a little low fat shredded cheese to the top for a treat. Enjoy!
