Diabetic Chocolate Chip Cookie Recipe

Ingredients:

1 cup butter
½ cup brown sugar substitute
2 eggs or egg substitute
2 teaspoons vanilla
3 cups whole wheat flour or oatmeal flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup skim milk
1 cup semi-sweet chocolate chips

Directions:

Pre-heat oven to 350 degrees. Prepare your cookie sheets by spraying lightly with diet cooking oil. Mix together butter, eggs, vanilla, and milk until all ingredients are smooth. Next add your dry ingredients and chocolate chips. 

Drop a rounded teaspoon full of the cookie dough onto the cookie sheet. Bake for 10-14 minutes or until they are light golden brown. Pull from the oven and let them cool. Warm chocolate chip cookies are hard to resist. This recipe makes about 6 dozen cookies. Diabetic Zucchini Bread Recipe

This diabetic zucchini bread recipe is a delicious treat to eat with one of your favorite meals, for breakfast or as a quick easy snack. It’s a perfect fit to add into a diabetics eating plan as a special treat without adding too much to their sugar intake.

Ingredients:

¼ cup egg white
½ cup of diet margarine warmed until it is melted
3/4 cup of unsweetened applesauce
2 cups chopped or shredded zucchini
2 cups whole wheat flour
¼ chopped walnuts or pecans
½ cup of carrot chopped or shredded
¾ cup of brown sugar or brown sugar substitute
¾ cup Stevia or splenda
2 teaspoons of vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon nutmeg 

Directions:

Heat your oven to 350 degrees. Spray 2 medium loaf pans with cooking spray. In a large bowl combine the melted margarine, brown sugar substitute, applesauce and eggs. Stir until all ingredients are well blended. Add the vanilla, nutmeg, cinnamon, baking soda and baking powder. Then add flour slowly, while stirring add in the nuts, zucchini and carrots. Beat together with a mixer until it is consistent. Pour into your baking loaf pans. Bake for 35- 40 minutes. Test with a toothpick, if no dough sticks to it they are done. You may need to adjust your baking time to your areas elevation.

This will make 2 delicious loaves. This diabetic zucchini bread recipe tastes outstanding when eaten warm. A slice of this bread can be warmed up in the microwave for about 10 seconds.
