We see it in the store and often times walk past simply because we know that they are hard to peel and core. There is a secret though that many people do not understand, the store will often times do it for you. Just like that, you can have fresh pineapple ready to enjoy, and here are just a few great fresh pineapple recipes that are worth your time preparing.

Brazillian Grilled Pineapple

Cut your pineapple into six long wedges. Add 1 cup of brown sugar and 2 teaspoons of cinnamon into a large bowl. Stir until uniformly mixed. Using a spoon sprinkle a light coating around each wedge. Pre heat your oven or grill and place pineapple on a pan and into the oven, or place on your grill. Cook until the sugar and cinnamon start to caramelize and the pineapple is tender.

­­­­­Use one peeled and cored pineapple and cut into 1 inch circles. In a large ziplock sealable bag add ½ teaspoon of honey, 6 tablespoons melted butter, several dashes of hot sauce to suit your taste, and a sprinkle of sea salt. Mix the ingredients well. Place the pineapple circles in the bag to get a good even coating on all of the circles. Let marinate for at least 30 minutes, overnight is even better. The salt will cut down on the acid taste and the hot sauce cuts down the sugar taste. Place on a preheated grill or oven. Cook till they are golden brown and serve them warm. This grilled pineapple recipe is great as an appetizer or dessert. 

 

Lime and Coconut Grilled Pineapple

Use a pineapple with the core left in it, cut into 1 inch slices. In a large bowl add 4 tablespoons of honey, 2 teaspoons of olive oil, 2 tablespoons of lime juice, and 2 teaspoons of cinnamon; stir well.  Pour coconut flakes on a small plate. Dip your pineapple rings into your liquid covering both sides. Then to the plate with the coconut flakes, turn the pineapple over to get a layer of coconut on both sides. Place them directly on your grill using low heat and cook until brown and tender. Once they are done you can cut them into small wedges and use for an appetizer, salad topping, or add a scoop of vanilla ice cream and have an awesome dessert. 

 

Rum and Coke Grilled Pineapple

Rum and Coke Grilled Pineapple 

Start with one cored pineapple sliced into 1 inch circles, place in a baking dish. Add equal amounts of rum and coke until the pineapple is covered. Let this marinate over night. Drain excess liquid off. Sprinkle a little brown sugar and cinnamon on top. Place in 350 degree preheated oven. Bake until there is a nice golden brown and the sugar has caramelized. Serve with a sprinkle of powdered sugar or whipped cream on top.
