Ingredients:

3 cups of cooked brown rice
2 cups of grilled chicken breasts, diced into small pieces
1 can of  drained black beans
1 can of sliced olives
½ cup of grated Monterey Jack or pepper jack cheese
½ cup of corn
½ cup of diced tomatoes or tomatillo’s
1 small jar of your favorite salsa

Directions:

This easy recipe can be used as a cold salad or as a warm side dish. Stir ingredients together, if you want to serve it warm you can microwave it for a couple of minutes or heat it in a sauce pan. Right before serving sprinkle the grated cheese on top as a garnish.  Serve with tortilla chips and a side of guacamole is always welcomed with this recipe. Serves:  4-5

Brown Rice Pudding Dessert

Brown Rice Pudding Dessert

Ingredients:

4 cups of cooked brown rice
3 cups of milk
1 cup of honey or maple syrup
1-2 cups of raisins or craisins, optional
½ cup of chopped pecans or coconut
2 tablespoons of unsalted butter
2 teaspoons of cinnamon or nutmeg, if desired both can be used

Directions:

In a large sauce pan combine the rice, milk, honey, and raisins; bring to a boil and stir often. Reduce the heat and let it slowly simmer for 20 minutes. Remove your dessert from the heat and add in the butter, cinnamon, and chopped nuts. Stir together until well blended. Serve in small custard dishes. Serve plain or sprinkle the top with cinnamon or powdered sugar, or add a scoop of ice cream on the side. Serves: 6-8
