Protein pancakes is a recipe that is phase 3 friendly for the Atkins diet, and so very delicious. It is a choice that will leave you wondering how something so good could be so healthy.

2 egg whites
1 scoop of vanilla protein powder (sugar free)*
½ banana mashed
1 teaspoon cinnamon
1 tablespoon flaxseed
½- 1 cup of frozen or fresh blueberries thawed
1 packet of stevia
Mix together well all the above ingredients except for the blueberries and stevia. Spray a frying pan or griddle with olive or canola oil over medium to low heat. Pour the desired amount to make the size pancake desired and spread in a few blueberries. Cook 2 to 3 minutes on each side being careful not to overcook and burn. Sprinkle a little stevia packet over it, eat and enjoy!
* this flavor can be substituted with other flavors of sugar-free protein powders, if desired.
