Spicy Chicken Tortilla Soup Recipe
How many times have you gone to a restaurant and had their Spicy Chicken Tortilla soup. It is always very tasty, and you think “Wow, I wish I knew how to make this at home.” We have thought the same thing found a tasty recipe that is amazingly easy and delicious. This recipe allows you to make it as mild or as spicy as you like.
1 pound of skinless chicken breasts, cut into small cubes
2 large cans of chicken broth
¼ cup of enchilada sauce
1 small bag of frozen corn
½ cup of rice
Salt to taste
In a large pot combine the chicken broth, enchilada sauce and rice together. Cover it and bring to a low boil. Next add the chicken and boil on medium for 5-10 minutes. Add salt and Cheyenne pepper to suit your taste.
The soup is great but what makes it more delicious is how it is served. In a warm bowl add some shredded Jack and Mozzarella cheese; if you like your foods a little spicier add some Pepper Jack as well. Ladle the soup into the bowl and add a little salsa if you like. Next place thin slices of avocados on the top and add thinly sliced green onions. You can float some thin tortilla strips and place a dollop of sour cream on them as well. Dust lightly with Cheyenne pepper for a bit more spice. Jalapeños can be added into the soup or as a garnish. For a little change of flavor you can sprinkle a few bacon bits on top.

1 large chopped onion
1 small package of taco seasoning
1 medium can of pinto beans
1 medium can of hot chili beans
1 medium can of whole kernel corn

1 medium can of any flavor of stewed tomatoes
Brown the meat and onions, mix in the taco seasoning. Do not drain the ingredients; simply add them all together in a large pot. Slowly simmer for 60 minutes.
