When I was young vacation time for us meant either going to the grandparent’s home, or they might come visit us. Either way when summer vacation rolled around it was time to enjoy Grandmas strawberry pancake recipe. To get her strawberry pancake recipe was not an easy task because Grandma didn’t follow recipes and everything was added to the mix by what looked like the right amount. After watching her for years I have come close to one of the things she was loved for, her strawberry pancake recipe. They smelled great cooking and tasted even better. 1-2 cups of flour or bisquick mix (if you use flour add 2 tsps of baking powder)
2-3 tablespoons of raw honey
1 ½ cups of milk, or French vanilla creamer to change flavor
1 large egg
Small pinch of salt
3 cups of thinly sliced fresh strawberries (save one cup for your topping)
Blend all the ingredients together until the texture is smooth and consistent. Add more flour or milk as needed. Add the strawberries last gently folding them into the batter. Be sure to keep one cup set aside for the topping. Cook in a skillet or on a griddle.
Grandma always garnished hers with fresh whipped cream and strawberries for the topping. However, you can also sprinkle a few pecan bits for an added touch of culinary pleasure.

Strawberry Cream Cheese Dessert
Grandma liked to spoil us kids by baking cookies during the day. Her specialties were shortbread or sugar cookies. Our goal was to eat them before they got cold. She was smart enough to hide some for one of my favorite desserts, strawberry cream cheese dessert.
8-10 Shortbread or sugar cookies
½ cup of butter
1/3 cup of confectionary sugar
6-8 ounces of cream cheese
¾ cup of whipping cream
1 cup of chopped nuts, pecans or walnuts
1 tsp of pure vanilla extract
3 cups of fresh strawberries
Using 8-10 cookies and ½ of the chopped nuts she would crumble them up with a rolling pin. Place the mixture in a bowl and combine the butter in to make a dough base. Press into a pie pan or baking dish making a thin layer across the bottom. Bake in the oven until the crust base is a golden brown. Set aside and let it cool.
Blend the confectionary sugar, cream cheese whipping cream and vanilla and blend to a smooth consistency. Spoon a thin layer gently onto the cool crust. Place a thin layer of fresh strawberries then spoon another thin layer of your mixed batter. Repeat until the last layer is fresh strawberries. Put in the refrigerator to chill.
Right before serving add more whipped cream and a few more strawberry slices. You can add coconut or crushed nuts to make it a dessert supreme.
