1 1/4 cups whole wheat pastry flour

2 over-ripe large bananas

2 tablespoons room temperature light butter

1/4 cup of sugar

1/4  cup liquid egg substitute

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt


Preheat oven at 350 degrees. Spray well a bread pan with a nonfat cooking spray such as olive oil. In a large bowl, beat together the egg, butter, sugar, egg substitute, applesauce and vanilla extract. Then fold in the mashed bananas. In another bowl mix the dry ingredients. Then mix together. Pour the mixture in the bread pan and bake at 350 degrees for approx. 45-50 minutes. Be sure that the center comes out clean when a tooth pick is inserted in the center of the loaf. Cool for 5 minutes before enjoying!

3/4 cup warm water (110 F)
1 cup of bread flour
1 cup of whole wheat flour
2 tablespoons of sugar
3/4 teaspoon salt
2 teaspoons of olive oil
1 tablespoon instant nonfat dry milk powder
1/4 ounce or 2 tablespoons of active dry yeast


By Mixer:

Place all the dry ingredients in a mixing bowl. Beat with a flat beater for about 30 seconds then change to dough hook. Mix at speed of 2 while you slowly add in the oil and water from the side of the bowl. Continue to knead for approximately 2 minutes. The dough should be silky when touched. Shape the dough into a large ball and place in a greased bowl. Grease the top of the dough as well and cover. Let the ball rise for about 1 1/2 to 2 hours. It should be double in size. Punch it down and knead it several times. Place into a loaf pan and shape it. Continue to let it rise until it is just at about 1 inch above the top of the loaf pan. Cook in a preheated oven set at 350 degrees for about 35 minutes. The center of the bread should come out clean when a toothpick is inserted. Let stand 5 minutes and cool on a wire rack.

Follow the order of ingredients that are labeled for your bread maker into the pan. This may be found in the manual for your bread machine. This bread will bake on the bread cycle.

2 packages of yeast
1/3 cup of honey
1 cup warm water
1 cup half and half
4 large lightly beaten eggs
1 1/2 cups whole-wheat flour
1 1/2 teaspoon salt
4 3/4 cups of bread flour


Dissolve the yeast and honey in warm water in a mixing bowl while standing for 5 minutes. Mix in the half and half and eggs with a mixer on medium speed until well blended. Next add in the whole-wheat flour and salt while continuing to beat well. Stir in the bread flour 1/2 cup at a time. This should form a soft dough.

Spread dough out onto a hard floured surface and knead for about 5 minutes. It should be elastic and smooth. Place the dough in a greased large bowl and coat the top with grease as well. Cover and let it rise in a warm place at about85 degrees for about 45 minutes or until doubled in size.

Punch the dough down while turning on a lightly floured surface. Then knead lightly for about 5 times. Divide dough into 3 equivalent portions and work one portion at a time. Keep the remaining dough covered to keep it from drying out. Roll out each portion into a rectangular shape on a floured surface. Place each roll of dough in a loaf pan (8 x 4 inch) coated with cooking spray and press to fit. Bake in a preheated over at 375 degrees for 20 minutes. Cool for about 5 minutes then remove from pan and cool on wire racks. Mouth-watering YUM! Enjoy!

1 cup uncooked yellow cornmeal
1  can of creamed corn (14oz)
2 teaspoons baking powder
1 cup all-purpose flour
1/2 teaspoon baking soda
2 packets of Splenda
1 teaspoon table salt
1/2 cup buttermilk, reduced fat
2 large eggs (whites only)
2 teaspoons corn oil


Preheat oven at 400ºF. Grease an square cake pan (8 inch) with a an olive oil cooking spray, or other non-fat spray. Mix well the cornmeal, baking soda, Splenda, flour, salt, and baking powder in a large bowl with a fork. In a medium bowl mix the creamed corn, egg whites, buttermilk, and oil until well blended. Fold the mixture into the dry ingredients and blend. Pour the batter into the greased pan. Bake about 20 minutes. Insert a tooth pick in the middle to ensure it comes out clean. Cool for about 5-10 minutes then remove and cool completely on a wire rack. Cut into 8 even squares.
